Food cooked over fire, from traditional recipes and simple, seasonal, local ingredients

Food has the power to tell stories. It carries history, evokes nostalgia, and brings people together around a table.

Mike believes we have a great deal to learn from our ancestors — their forgotten practices, their respect for ingredients, and their ability to create extraordinary meals from simple, honest food. For him that means returning to the basics: bread made with just three ingredients, seasonal produce at its best, and meat and vegetables from local, ethical farmers.

The name comes from Fezziwig, Dickens' beloved character who embodies warmth, generosity, hospitality and joyful celebration — the values at the heart of everything he does. Through fire cooking, historical recipes and the recreation of traditional dishes, he hopes to reconnect people with the flavours and stories of the past.
